Halloween Recipe: Monster Trail Mix Bars

Ingredients
  • 12 (5×2 ½-inch) graham crackers
  • cup (1 ½ sticks) butter
  • cup firmly packed brown sugar
  • 3 cups miniature marshmallows
  • 1 bag (16 oz.) Archer Farms Monster Trail Mix (about 3 cups)
Instructions
  1. Preheat oven to 350°F. Line 15x10x1-inch jellyroll pan with aluminum foil leaving a 1-inch overhang on ends; spray foil with cooking spray. Place graham crackers onto foil so sides touch.
  2. Melt butter and brown sugar in medium saucepan on MEDIUM heat, stirring constantly, until smooth and mixture comes to a boil, about 5 minutes. Pour evenly over crackers.
  3. Bake 5 to 6 minutes or until bubbly overall.
  4. Remove pan from oven; sprinkle with marshmallows and trail mix. Continue baking until marshmallows begin to soften, about 2 to 3 minutes. Cool completely. Lift from pan using foil.
  5. Cut into bars and give the goods to the goblins!

 

Another take on Roasted Potato Wedges

I love fries! Actually, I can’t recall any of my acquaintances that don’t eat fries. Now, that I’m starting to find the motivation to starting to lose those proverbial “last 10 pounds” the plan is to avoid fry foods and it healthier.

The one option that we always do at home is roasted potato wedges. These are easy to prepare, I’m not afraid anymore of getting burn by oil splatter and better for our diet. There are plenty of herb combinations that you can use when preparing these … from paprika, chili powder to italian seasonings. Yes, although the possibilities are almost endless here is a great basic recipe to start this delicious dish.

By the way, did you know that today is National French Fries Day!

Pritikin Longevity Center & Spa’s Roasted Potato Wedges

Ingredients
  • 1 pound russet potatoes, washed and thinly sliced into wedges
  • cup red wine vinegar
  • cup water
  • 1 teaspoon granulated onion
  • 1 teaspoon chopped garlic
Instructions
  1. Preheat oven to 400 degrees F.
  2. Soak potato wedges in vinegar and water for about 30 minutes.
  3. On a nonstick baking sheet, spread out wedges. Sprinkle with onion and garlic.
  4. Bake in oven for about 20 minutes, turning once. Remove from oven when wedges are crispy on both sides.

Smoked Salmon Scramble on English Muffins

Today, I decided to hop on the bath scale… what a bad mistake. Lately, I’ve been spending countless hours to take my blogging to the next level. That loosely translate to, I stopped exercising and eating clean to spend time on the computer. Well, it’s time to get a handle on life and make an effort to eat better and exercise more. I’m not getting any younger so it’s time to make some lifetime changes.

This is the first change for breakfast or light lunch. It’s packed full of protein and balanced with the whole wheat english muffin.

Smoked Salmon Scramble on English Muffins

Ingredients
  • 4 english muffins, whole wheat, toasted
  • 2 oz smoked salmon
  • cooking spray
  • 6 large eggs
  • 1/3 cup heavy cream
  • 2 green onion tops, thinly sliced
  • 1/4 cup shredded swiss cheese (or you favorite shredded cheese)
  • salt & pepper, to taste
Instructions
  1. Preheat your broiler and line a baking sheet with aluminun foil.
  2. Dice the smoke salmon to bite sizes
  3. Whisk eggs and cream together.
  4. Add half of your sliced green onions and season lightly eggs with salt and pepper.
  5. Coat nonstick skillet with cooking spray and heat over medium low heat.
  6. Scramble eggs – do not cook eggs until dry.
  7. When eggs have come together but remain wet, stir in chopped salmon.
  8. Serve eggs over english muffins.
  9. Sprinkle them with cheese and broil for about 1 minute or until cheese is melted.
  10. Garnish with the rest of the green onions
