Almost Wordless Wednesday: Merry Christmas

This year we decided to visit my in-laws. We had a fantastic time and were able to create some great memories. One of them, was our impromptu Christmas Eve dinner. I wanted to do a roast pork – acclaimed by my family – as a way to help my mom-in-law in the kitchen. From there it evolved to having a typical puertorican Xmas dinner: Arroz con gandules y pernil.

I cooked a lot of food for 6 people and felt so accomplished when there was almost no pork left and no rice at all! Yeap… mission accomplished!

Halloween Recipe: Monster Trail Mix Bars

Ingredients
  • 12 (5×2 ½-inch) graham crackers
  • cup (1 ½ sticks) butter
  • cup firmly packed brown sugar
  • 3 cups miniature marshmallows
  • 1 bag (16 oz.) Archer Farms Monster Trail Mix (about 3 cups)
Instructions
  1. Preheat oven to 350°F. Line 15x10x1-inch jellyroll pan with aluminum foil leaving a 1-inch overhang on ends; spray foil with cooking spray. Place graham crackers onto foil so sides touch.
  2. Melt butter and brown sugar in medium saucepan on MEDIUM heat, stirring constantly, until smooth and mixture comes to a boil, about 5 minutes. Pour evenly over crackers.
  3. Bake 5 to 6 minutes or until bubbly overall.
  4. Remove pan from oven; sprinkle with marshmallows and trail mix. Continue baking until marshmallows begin to soften, about 2 to 3 minutes. Cool completely. Lift from pan using foil.
  5. Cut into bars and give the goods to the goblins!

 

Working on a Better Dinner 1/90

And so it begins. My goal is to take pictures of what I’m having for dinner for 90 days to keep me accountable. I’m also looking forward to see these pictures “get” healthier and healthier.

Not the best option to start but I did choose to have the sandwich on wheat bread. That’s a mini-mini win.
