Today, I decided to hop on the bath scale… what a bad mistake. Lately, I’ve been spending countless hours to take my blogging to the next level. That loosely translate to, I stopped exercising and eating clean to spend time on the computer. Well, it’s time to get a handle on life and make an effort to eat better and exercise more. I’m not getting any younger so it’s time to make some lifetime changes.
This is the first change for breakfast or light lunch. It’s packed full of protein and balanced with the whole wheat english muffin.

| Smoked Salmon Scramble on English Muffins |

Ingredients
- 4 english muffins, whole wheat, toasted
- 2 oz smoked salmon
- cooking spray
- 6 large eggs
- 1/3 cup heavy cream
- 2 green onion tops, thinly sliced
- 1/4 cup shredded swiss cheese (or you favorite shredded cheese)
- salt & pepper, to taste
Instructions
- Preheat your broiler and line a baking sheet with aluminun foil.
- Dice the smoke salmon to bite sizes
- Whisk eggs and cream together.
- Add half of your sliced green onions and season lightly eggs with salt and pepper.
- Coat nonstick skillet with cooking spray and heat over medium low heat.
- Scramble eggs – do not cook eggs until dry.
- When eggs have come together but remain wet, stir in chopped salmon.
- Serve eggs over english muffins.
- Sprinkle them with cheese and broil for about 1 minute or until cheese is melted.
- Garnish with the rest of the green onions
