This weekend I was in search of a pasta recipe that would only required 30 minutes to cook, be inexpensive and, AND be on the healthy side. I know, I know… you might think I’m asking for a lot but this is my criteria for the recipes on Cooking With Yoly.
Found this recipe at Ronzoni‘s website and knew right away I needed to try it… on my terms (my pantry), of course.

Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, sliced into strips
- 1 small green pepper, cut into thin strips
- 2 teaspoons finely chopped garlic
- 1/2 lb. boneless chicken thighs, sliced into thin strips
- 1 cup orzo, uncooked
- 2 cups water
- 1/2 teaspoon ground chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 3/4 cup chopped fresh tomato
- 1/4 cup finely shredded Cheddar cheese
- 2 tablespoons chopped fresh cilantro (optional)
- 1 teaspoon finely chopped jalapeno (optional)
Instructions
- In large non-stick skillet over high heat, heat oil; add onion, green pepper, garlic and meat.
- Cook, stirring constantly, until onion and pepper are browned, about 4 minutes.
- Add pasta; cook, stirring constantly, 1 minute.
- Add water and seasonings; heat to boiling.
- Reduce heat; cover.
- Simmer 12 minutes while stirring on ocassion or until liquid is absorbed.
- Stir in tomato; sprinkle with cheese, if desired, cilantro and jalapeno.
Serving size: 1 cup
