I created this recipe when I wanted to participate in the Real Women of Philadelphia Cheese video contest. I recorded twice and twice I had problems editing… more like I wasn’t confident enough to send it in. Hope you enjoy this low-carb and delish if I say so myself appetizer.
Ingredients
Yield: 8 bites
cooking spray
4 slices thin-sliced prosciutto, halved
3 egg whites
1 egg
3 tablespoons chives & onions flavored cream cheese
2 tablespoons chopped olives
1/4 teaspoon salt, optional
1/8 teaspoon freshly ground black pepper, optional
1- Preheat oven at 375°F
2- In a mixing bowl, whisk egg whites and whole egg until smooth
3- Whisk in cream cheese, olives, salt and pepper
4- Coat mini muffin pan with cooking spray
5- Line each muffin cup with prosciutto
6- Pour mixture in muffin cups
7- Bake, uncovered, until egg mixture is cooked through. This will take about 10 to 12 minutes
