Grilled Corn on the Cob

Will you forgive me if I confess this is the first summer that we have tried grilled corn on the cob? Please do! I don’t know why it took us so long to try it. I’m just thankful we are on this new path of healthy eating while saving our pennies. Why? You may be asking yourself this and well, the answer is really simple corn on the cob is extremely inexpensive.

We can buy them anywhere from $0.25 each to $0.50 if we decide to go to the local farmer’s market. Either way we’ll have a satisfying side dish, full of fiber, low in fat and calories that is simply delicious. There are three basic ways to cook these: boiling, in the microwave or our favorite on the grill.

Boil

Remove husk and silk from the corn. Rinse well. Using lightly salted boiling water place in the corn and put the lid on. Cook until tender which is about 5 to 7 minutes.

Microwave

Remove husk and silk. Wrap the ears with wax paper (individually) and using a microwave safe container give them about 3 – 4 minutes per ear on 100% power.

Grilling

For us this is the way to go. Remove some of the husk; leaving just enough to cover the corn when it touches the grill. Peel back like you were peeling a banana the remaining husk and remove the silk. Using medium heat on a gas grill or put it in when the charcoal is all white — a good way to know if your charcoal grill is ready to cook is if your hand can stand the heat (about 6″ away from grill) for about 4 seconds let the corn cook for about 2 – 3 minutes per side. Peel back husk and let exposed corn get the grill marks (it takes just a minute)

    I forgive you lol. I think I may have grilled corn once. However, we eat it weekly.(boil) I love corn on the cob. Your corn looks scruptous!

    Thank you! There was a time that the only veggie I would eat was canned corn. I'm excited that I can have it more often now that I know is not that hard to cook.
