Here’s a recipe to use those tortillas we got for the Huevos Rancheros recipe.
4 tilapia fillets
1 tablespoon olive oil
1 juice of a lime
1 tablespoon cumin
2 tablespoons southwest seasoning
salt
8 corn tortillas or flour tortillas (small size)
cooking spray
1- Heat oil on nonstick pan over medium-high heat.
2- Cut tilapia fillets in half and add to pan.
2- Season with half the lime juice, salt, cumin and southwest seasoning.
3- Once that side is cooked (about 3 minutes per side), flip and season, cooking till golden.
4- Heat a small pan over medium heat and spray with cooking spray. Add tortilla, cooking and heating both sides for about 30 seconds per side.
5- Fill tortilla with a portion of fish and then top with desired toppings.
My suggestions for toppings:
sour cream
guacamole
minced onion
shredded cheese
fresh salsa
Remember that you can make the recipe yours. You could change the seasonings to Old Bay or even bread the tilapia before frying.
