2 pork tenderloins (3/4 pound each)
1 teaspoon coarsely ground pepper
2 tablespoons Crisco® Pure Olive Oil
3 quarts water
1-1/4 cups uncooked orzo pasta
1/4 teaspoon salt
1 package (6 ounces) fresh baby spinach
1 cup grape tomatoes, halved
3/4 cup crumbled feta cheese
Instructions
1- Bring water to a boil in a medium saucepan
2- Cut pork in 1″ cubes
3- Season pork with pepper
4- Pour oil on heated skillet and add pork. Stir occasionally.
5- Add orzo to boiling water and cook for 7 minutes
6- Add spinach to orzo and cook for about a minute – enough to wilt the spinach
7- Add halved tomatoes to skillet
8- Drain orzo and spinach and add to skillet
9- Add feta cheese

- Added a teaspoon of minced garlic while cooking the pork tenderloin
- Added sliced olives when tomatoes go in the skillet
